Guac n’ Roll!

So as you may have seen on facebook or twitter, yesterday was a “take back our life” day here at the J&M homestead. First we went to the beach and looked for sea glass, then we came back and went grocery shopping, lounged in the hammock, did some reading in between loads of fresh linen laundry, cleaned the house, and then finished with my personal favorite: homemade guacamole and yummy mahi mahi sandwiches on the grill!

Since it’s getting to be about lunch time, we thought we’d share some of that yumminess with you! First up, Mary’s recipe for knock your socks off guac!!

The ingredients: 3 or 4 avocados, 1 fresh tomato, 1 red onion, a couple handfuls of cilantro, 2 limes, some sea salt and a lemon to taste.

I’m a pretty laid back chef, so all my recipes go a little something like this: take all this stuff and mix it together!!! Taste it, adjust. Taste it again a second time…you know just for good measure!.

Then finish it off with some ground sea salt. These little babies are Justin’s. It was one of his best contributions to the marriage….well y’know that and his boyish good looks and mad Mario Kart skillz!!

And you should finish with something like this:

Then take some corn, butter it up and throw in some of that sea salt. Wrap it up in tin foil and pop it on the grill for about 30 minutes. About 10 minutes in, add some mahi mahi filets with citrus mesquite seasoning on top of soaked cedar planks. It should look like this:

The most important ingredient: a lovely white wine from a local vineyard. This one is from Chamard Vineyards just down the road from us!

Then….dig in!!

And finally, a HUGE thank you to Julia, aka “The Apprentice” who got me this book and apron from one of my favorite stores on the planet: Anthropologie. The back cover says: cook together, eat together, and remember food is precious.

True that.

I am all over that Guac! I am the only one in my house that will eat it, but I love it and always up for trying new things. I will be documenting my friend Ali’s fresh mango salsa on my blog shortly- it is to die for!
Love the cutting board by the way!

Mary!! Your kitchen, utensiles, colors are so awesome. What you need (And it totally goes with your personality) is a retro-apron to wear in the kitchen. Do you have one? If not…my sister-in-law has this great store that sells them. Check it out…you Sooooo need one if you don’t already. http://www.rubysfarmhouse.com

Mary! Hammock-so one of my all time most blissful relaxing things ever, and guac-well I absolutely love this too. My recipe is the same as yours with a clove of minced garlic. I am a huge garlic lover.

Maybe some day we will break chips:)

I *heart* fresh quac….my mouth iswatering now. what a great afternoon spent together. Ohh and I wanted to tell you…with the corn, you can fore-go the butter and add those babies right to the grill in the husks. Takes about the same time, and they are just as juicy from the silk in the husks. Great post guys :)
