So as you may have seen on facebook or twitter, yesterday was a “take back our life” day here at the J&M homestead. First we went to the beach and looked for sea glass, then we came back and went grocery shopping, lounged in the hammock, did some reading in between loads of fresh linen laundry, cleaned the house, and then finished with my personal favorite: homemade guacamole and yummy mahi mahi sandwiches on the grill!
Since it’s getting to be about lunch time, we thought we’d share some of that yumminess with you! First up, Mary’s recipe for knock your socks off guac!!
The ingredients: 3 or 4 avocados, 1 fresh tomato, 1 red onion, a couple handfuls of cilantro, 2 limes, some sea salt and a lemon to taste.
I’m a pretty laid back chef, so all my recipes go a little something like this: take all this stuff and mix it together!!! Taste it, adjust. Taste it again a second time…you know just for good measure!.
Then finish it off with some ground sea salt. These little babies are Justin’s. It was one of his best contributions to the marriage….well y’know that and his boyish good looks and mad Mario Kart skillz!!
And you should finish with something like this:
Then take some corn, butter it up and throw in some of that sea salt. Wrap it up in tin foil and pop it on the grill for about 30 minutes. About 10 minutes in, add some mahi mahi filets with citrus mesquite seasoning on top of soaked cedar planks. It should look like this:
The most important ingredient: a lovely white wine from a local vineyard. This one is from Chamard Vineyards just down the road from us!
